I've got a set of old cast iron fry pans from the early 70's, all with machined flat cooking surfaces. They are well seasoned and well cared for. They cook as well as any non-stick fry pan on the market today. I bought this fry pan for a second home. What sold me was the fact that in the description, it states it has "a flat cooking surface". Unfortunately, it doesn't. It has the same rough surface and another popular brand. However, the roughness is not as pronounced as the surface of the popular brand. A true smooth surface fry pan actually has to be machined and normally costs three times as much. But this fry pan performs almost as well.It does cook very well and if cared for, is with a few exceptions, non stick. I took an extra step and seasoned it by first frying a rib eye with lots of fat. It did stick but not badly. I had to glaze the surface and then wipe it out with a paper towel. I next did Swedish Pancakes which always leaves my old fry pan smooth. I fried several using lots of butter for each pancake. None stuck at all. When finished, all I had to do was to wipe it clean with a paper towel. Same result on my new pan. I have fried bacon, chicken (spelled AWESOME fried chicken, tempura shrimp, hash browns, eggs and many other items. It performed great. Overall I'll give in an 95% compared to my old reliable fry pan. The only reason for not a 5 star is basically the miscue in the description and the few items that left residue on the surface. My new fry pan can usually be wiped clean with a paper towel after using the GREAT spatula that comes with it. Rarely has it required glazing to get it completely clean. For the price, it's a great value. I would not hesitate to give it as a gift.After reading from others that additional seasoning was required, I followed those instructions on how to season properly using flaxseed oil at 475 degrees in the over, letting the pan cool completely after turning the oven off. And repeat at least two more times. I them proceeded to make cornbread. The cornbread would not come out of the pan. It did, finally, with most of it stuck to the bottom, What a mess. I cleaned it as best I could and gave it to a relative who likes to cook and bake. I will make the next cornbread using my Pyrex or Wilton metal non-stick pans.Just like cast iron.This is a wonderful 8 inch pre-seasoned cast iron frying pan. It comes with a silicone handle cover and a scraper. It is exactly what I wanted!!It is the size that I wantedVery light weight and the person I gifted it to is absolutely in love.I purchased the 12" and after cooking with it for about two months I decided to buy the 10" pan as well. I love cooking in these pans food tastes way better. I find it easy to clean. I use a regular sponge with warm soapy water and put it on the stovetop on low to dry so it won't rust. Lid is not included, I purchased mine separately.Although I purchased this for a gift, I ended up getting it back. My boyfriend wanted a pan that wouldn’t warp. He didn’t understand how to use cast iron. I guess it would be nice for the instructions to give more detail that you need to heat it up prior to putting meat in it it will stick really bad. I was raised using cast iron so I knew this. I love the pan myself.
